Se preparaba sin prisa, con huesos, verduras, restos de carne, hojas verdes, especias m\u00ednimas y la certeza de que ese l\u00edquido claro sostendr\u00eda otras recetas: sopas, arroces, guisos, salsas, cremas. Un buen caldo no es un plato: es un cimiento.<\/p>\n<p>El caldo casero no nace para impresionar. No tiene color intenso, ni espumas, ni rellenos. Su belleza es invisible hasta que entra en otra receta y la eleva. Por eso no se mide por lo que es, sino por lo que permite.<\/p>\n<p>Y aqu\u00ed est\u00e1 la diferencia esencial: <strong>un caldo no se hace para hoy, se hace para los pr\u00f3ximos d\u00edas. No alimenta una vez, alimenta muchas. Es cocina que piensa a futuro.<\/strong><\/p>\n<h2>Tiempo lento, fuego bajo y lo justo en el agua<\/h2>\n<p><a href=\"https:\/\/eldigitaldeasturias.com\/magazine365\/category\/sabores\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #ff6600;\"><strong>El caldo perfecto<\/strong><\/span><\/a> no hierva: tiembla. Si el agua hierve fuerte, el l\u00edquido se enturbia, la grasa se rompe y el sabor se vuelve plano. El caldo se decanta, se clarifica y se respeta. Por eso se trabaja al m\u00ednimo fuego posible.<\/p>\n<p>Los huesos de pollo o ternera aportan estructura y col\u00e1geno; las verduras \u2014zanahoria, cebolla, puerro, apio\u2014 aportan dulzor y fondo vegetal. No hace falta mucho m\u00e1s: una hoja de laurel, unos granos de pimienta, un trozo de puerro, un toque de sal solo al final.<\/p>\n<p>La magia ocurre despu\u00e9s, cuando el caldo se enfr\u00eda. Al dejarlo reposar, la grasa sube, el sabor se concentra, lo que parec\u00eda agua con color se convierte en esencia. El caldo no se guarda caliente: se guarda limpio.<\/p>\n<p>Y lo mejor: se transforma infinitamente. De un mismo caldo nacen sopas claras, cremas espesas, arroces que no necesitan pastilla, lentejas que parecen de casa de pueblo, salsas brillantes, risottos que saben a algo m\u00e1s que arroz.<\/p>\n<blockquote><p>El caldo recuerda que la cocina no empieza en el plato final, sino en la olla paciente.<\/p><\/blockquote>\n<p>Un buen caldo casero es la prueba de que la excelencia puede surgir de lo m\u00e1s humilde: restos, agua, tiempo y fuego bajo. No es receta: es herencia.
