Suena sencillo: pieza, sart\u00e9n, fuego. Sin marinados complicados, sin salsas que disimulen fallos, sin cocciones de horas. Y sin embargo, es uno de los m\u00e9todos que m\u00e1s revela si quien cocina entiende \u2014o no\u2014 lo que est\u00e1 haciendo.<br \/>\nCuando la carne sale seca, correosa o sin color, no ha fallado el producto: ha fallado la t\u00e9cnica.<\/p>\n<p>Lo que diferencia una carne que se corta con el tenedor de otra que obliga a pelear con el cuchillo no es el precio ni el corte, sino la forma de tratarla antes, durante y despu\u00e9s del fuego. Cocinar carne a la plancha es un ejercicio de respeto: el calor act\u00faa, pero la mano decide cu\u00e1ndo.<\/p>\n<h2>El fuego no se negocia<\/h2>\n<p>El gran error de quienes empiezan es el mismo: poner la carne cuando la plancha a\u00fan no est\u00e1 caliente. Si no hay choque t\u00e9rmico, no hay sellado, y sin sellado no hay jugo que se quede dentro. La carne no debe entrar en un ambiente templado, sino en uno que la reciba con intensidad.<br \/>\nSolo as\u00ed se forma esa capa dorada que no es decoraci\u00f3n: es barrera protectora.<\/p>\n<p>La sal tambi\u00e9n tiene su momento. Si se pone demasiado pronto, extrae la humedad; si se pone demasiado tarde, no penetra. El equilibrio ideal es salarla justo antes de entrar en la sart\u00e9n o incluso despu\u00e9s del sellado, cuando la superficie ya ha creado costra y el interior sigue vivo.<\/p>\n<p>Girar la carne demasiado pronto tambi\u00e9n arruina el proceso. Un truco infalible: la pieza te \u201cavisa\u201d cuando est\u00e1 lista para moverse \u2014se despega sola\u2014. Si hay que forzarla con la esp\u00e1tula, a\u00fan no est\u00e1 sellada.<\/p>\n<blockquote><p>Y nunca, nunca, hay que presionar la carne contra la plancha: cada vez que se aplasta, se expulsan los jugos que deber\u00edan quedarse dentro.<\/p><\/blockquote>\n<p>El descanso final es el paso m\u00e1s olvidado. Una carne reci\u00e9n hecha a\u00fan est\u00e1 en tensi\u00f3n; si se corta enseguida, pierde lo que hemos intentado conservar. Bastan 3 o 4 minutos fuera del calor para que los jugos vuelvan al interior y la pieza se relaje. Es el minuto m\u00e1s importante\u2026 y el \u00fanico que casi nadie respeta.<\/p>\n<p>Una buena <a href=\"https:\/\/eldigitaldeasturias.com\/magazine365\/category\/sabores\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #ff6600;\"><strong>carne a la plancha<\/strong><\/span><\/a> no se consigue con trucos, sino con dominio del tiempo, del fuego y de la paciencia.
