{"id":26803,"date":"2014-10-08T22:33:35","date_gmt":"2014-10-09T00:33:35","guid":{"rendered":"http:\/\/eldigitaldeasturias.com\/magazine365\/?p=26803"},"modified":"2014-10-08T22:33:35","modified_gmt":"2014-10-09T00:33:35","slug":"el-umami-se-incorpora-al-universo-de-sabor-de-el-celler-y-rocambolesc","status":"publish","type":"post","link":"https:\/\/eldigitaldeasturias.com\/magazine365\/el-umami-se-incorpora-al-universo-de-sabor-de-el-celler-y-rocambolesc\/","title":{"rendered":"El \u00abumami\u00bb se incorpora al universo de sabor de El Celler y Rocambolesc"},"content":{"rendered":"<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignleft size-medium wp-image-26804\" alt=\"6717063w\" src=\"https:\/\/eldigitaldeasturias.com\/magazine365\/wp-content\/uploads\/2014\/10\/6717063w-321x300.jpg\" width=\"321\" height=\"300\" \/>San Sebasti\u00e1n, 8 oct (EFE).- Los sabores primarios -dulce, salado, amargo y \u00e1cido- al que Jap\u00f3n ha sumado un quinto, el \u00abumami\u00bb, es la nueva l\u00ednea de trabajo de Jordi Roca, el responsable de los postres del triestrellado El Celler de Can Roca e ide\u00f3logo de los helados de Rocambolesc, ambos en Girona.<\/p>\n<p>Hoy la ha presentado en San Sebasti\u00e1n Gastronomika, en forma de un nuevo postre que servir\u00e1n en breve y para el que han dise\u00f1ado un espectacular recipiente en forma de torre desmontable de colores.<\/p>\n<p>En ella, el menor de los Roca y considerado Mejor Chef Repostero del Mundo, representa el \u00abumami\u00bb con jarabe de algarroba, chocolate, miso y s\u00e9samo caramelizado; el dulce con fresas liofilizadas, \u00abmoshi\u00bb de miel y confitura de frutos rojos, y el amargo con crema de \u00abyuzu\u00bb, grosellas granizadas, granizado de lim\u00f3n y caramelo de \u00e1cido c\u00edtrico.<\/p>\n<p>Se completa con el sabor salado representado en un sabl\u00e9 de quicos, granizado de mezcal y salicornia, y el \u00e1cido con \u00abyuzu\u00bb, lima, grosella y manzana \u00e1cida.<\/p>\n<p>\u00abEs un postre extremadamente reflexivo, que puede ser un final de fiesta\u00bb, ha dicho Jordi Roca, quien ha recordado que en su restaurante se trabaja \u00aba tres cabezas\u00bb -la suya y la de sus hermanos Joan y Josep-, por lo que muchos de los platos salados se adaptan como postres y como helados, que ofrecen en Rocambolesc.<\/p>\n<p>De ah\u00ed que tambi\u00e9n haya presentado una versi\u00f3n \u00abpirulo\u00bb del RocaTocha -un polo con la forma de su nariz-, en el que el \u00abumami\u00bb est\u00e1 presente, por primera vez, en un helado.<\/p>\n<p>Esta l\u00ednea de investigaci\u00f3n en los sabores primarios radica en la convicci\u00f3n de que \u00abel mapa de la lengua es un error, existen receptores en toda la superficie del \u00f3rgano\u00bb, seg\u00fan un experimento de sinestesia desarrollado en La Mas\u00eda, su centro de creatividad, sobre estos cinco sabores.<\/p>\n<p>De ah\u00ed result\u00f3 que la cocina dulce de El Celler de Can Roca, interpretada con los cinco sentidos, es \u00absuave y pegajosa, tiene olor de reci\u00e9n hecho, es multicolor, suena a melod\u00eda susurrada y se ve como un circo\u00bb.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>San Sebasti\u00e1n, 8 oct (EFE).- Los sabores primarios -dulce, salado, amargo y \u00e1cido- al que Jap\u00f3n ha sumado un quinto, el \u00abumami\u00bb, es la nueva l\u00ednea de trabajo de Jordi Roca, el responsable de los postres del triestrellado El Celler de Can Roca e ide\u00f3logo de los helados de Rocambolesc, ambos en Girona.
