Todo empieza sin prisas y nadie pregunta la hora de comer: el asado se respeta, no se acelera.<\/p>\n<p><strong>El parrillero no es un cocinero, es un anfitri\u00f3n<\/strong>. No trabaja en silencio: conversa, observa, calcula, gira, escucha el sonido de la carne sobre la parrilla como quien afina un instrumento. No hay term\u00f3metro, hay ojo, o\u00eddo y experiencia. Y mientras tanto, la mesa se va llenando de panes, chimichurri, ensaladas y vasos de vino o cerveza, porque el asado no se come solo: se comparte.<\/p>\n<h2>La t\u00e9cnica est\u00e1 en la paciencia<\/h2>\n<p>El secreto del asado argentino no est\u00e1 en los cortes \u2014que son generosos\u2014 ni en las brasas \u2014que son esenciales\u2014, sino en el tiempo. Nunca se coloca la carne sobre el fuego directo: se deja que la brasa pierda su furia para que caliente sin quemar. <strong>La carne no se voltea continuamente, no se pincha, no se mueve sin necesidad.
