La leche se agriaba r\u00e1pido, el vino se volv\u00eda vinagre, la cerveza se echaba a perder y las infecciones alimentarias eran comunes. No exist\u00edan frigor\u00edficos, ni envases as\u00e9pticos, ni conservantes modernos. La gente simplemente asum\u00eda que la comida \u201cmor\u00eda\u201d con el tiempo, sin saber que el verdadero enemigo era algo invisible.<\/p>\n<p data-start=\"1037\" data-end=\"1399\">Fue entonces cuando un investigador franc\u00e9s \u2014que no era cocinero, sino qu\u00edmico\u2014 empez\u00f3 a estudiar los microorganismos que causaban estas alteraciones. Su descubrimiento fue revolucionario: no era el aire en s\u00ed el que estropeaba la comida, sino los seres diminutos que viajaban en \u00e9l. Si se lograba eliminarlos sin destruir el alimento, se ganaba tiempo\u2026 y salud.<\/p>\n<h3 data-start=\"1401\" data-end=\"1443\">Una soluci\u00f3n tan simple como brillante<\/h3>\n<p data-start=\"1445\" data-end=\"1723\">El m\u00e9todo que desarroll\u00f3 consist\u00eda en calentar un alimento l\u00edquido hasta una temperatura controlada durante un corto periodo y luego enfriarlo r\u00e1pidamente. Con eso bastaba para destruir las bacterias responsables del deterioro sin afectar el sabor ni la estructura del producto.<\/p>\n<p data-start=\"1725\" data-end=\"2128\">Ese proceso, que hoy todo el mundo conoce sin pensarlo dos veces, permiti\u00f3 que la leche, el vino, los zumos y hasta algunos alimentos preparados se conservaran mucho m\u00e1s tiempo sin descomponerse. Era tan eficaz que pronto se extendi\u00f3 por toda la industria. Su nombre qued\u00f3 asociado para siempre al cient\u00edfico que lo desarroll\u00f3, aunque \u00e9l mismo nunca imagin\u00f3 que acabar\u00eda en cada envase del supermercado.<\/p>\n<p data-start=\"2130\" data-end=\"2331\">Hoy lo usamos a diario sin siquiera mencionarlo: calentar, eliminar microbios, conservar. Una idea sencilla, pero tan poderosa que dividi\u00f3 la historia de la alimentaci\u00f3n en dos \u00e9pocas: antes y despu\u00e9s.<\/p>\n<h3 data-start=\"2333\" data-end=\"2392\">La t\u00e9cnica que abri\u00f3 la puerta a la alimentaci\u00f3n segura<\/h3>\n<p data-start=\"2394\" data-end=\"2485\">La importancia de este experimento va mucho m\u00e1s all\u00e1 de la leche de desayuno. Gracias a \u00e9l:<\/p>\n<ul data-start=\"2487\" data-end=\"2847\">\n<li data-start=\"2487\" data-end=\"2561\">\n<p data-start=\"2489\" data-end=\"2561\">Se redujeron dr\u00e1sticamente las infecciones transmitidas por alimentos.<\/p>\n<\/li>\n<li data-start=\"2562\" data-end=\"2651\">\n<p data-start=\"2564\" data-end=\"2651\">Fue posible almacenar comida durante m\u00e1s tiempo y transportarla a grandes distancias.<\/p>\n<\/li>\n<li data-start=\"2652\" data-end=\"2716\">\n<p data-start=\"2654\" data-end=\"2716\">Naci\u00f3 la industria de los l\u00e1cteos tal como la conocemos hoy.<\/p>\n<\/li>\n<li data-start=\"2717\" data-end=\"2782\">\n<p data-start=\"2719\" data-end=\"2782\">Aparecieron nuevos productos listos para consumir sin riesgo.<\/p>\n<\/li>\n<li data-start=\"2783\" data-end=\"2847\">\n<p data-start=\"2785\" data-end=\"2847\">Se impuls\u00f3 la investigaci\u00f3n sobre microbiolog\u00eda alimentaria.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2849\" data-end=\"3011\">Adem\u00e1s, inspir\u00f3 otros avances posteriores: las conservas selladas, los m\u00e9todos de esterilizaci\u00f3n, los envases ultraresistentes y hasta la comida para astronautas.<\/p>\n<p data-start=\"3013\" data-end=\"3349\">Lo que comenz\u00f3 como una investigaci\u00f3n sobre por qu\u00e9 el vino se echaba a perder, termin\u00f3 siendo la base de la seguridad alimentaria moderna. Hoy el proceso es tan com\u00fan que pasa desapercibido, pero cada vez que alguien abre una botella de zumo, bebe leche envasada o sirve salsa de un frasco, est\u00e1 usando el resultado de ese experimento.<\/p>\n<h3 data-start=\"3351\" data-end=\"3404\">Un recordatorio de que la ciencia tambi\u00e9n se come<\/h3>\n<p data-start=\"3406\" data-end=\"3700\">La historia de este descubrimiento es un ejemplo perfecto de c\u00f3mo la ciencia aplicada a problemas cotidianos cambia la vida sin necesidad de grandes titulares.
