Foto: Bernd Diekjobst\/dpa<\/figcaption><\/figure>\n<p>Y en realidad es moho, porque en la producci\u00f3n de tempeh se utilizan mohos determinados, como explica el Centro Federal de Nutrici\u00f3n de Alemania (BZfE). <strong>La soja pelada y cocida se mezcla con \u00e9l antes de que la masa fermente.<\/strong><\/p>\n<h2>\u00bfA qu\u00e9 sabe el tempeh?<\/h2>\n<p>Los expertos en nutrici\u00f3n del BZfE describen el <a href=\"https:\/\/eldigitaldeasturias.com\/magazine365\/category\/sabores\/\"><span style=\"color: #ff6600;\"><strong>sabor<\/strong><\/span><\/a> del tempeh como de setas con un ligero toque a nueces. Su textura es firme y crujiente.<\/p>\n<p>Dependiendo de c\u00f3mo se condimente, su sabor puede variar. El BZfE recomienda marinarlo en salsa de soja, sirope de arce, vinagre de arroz as\u00ed como con jengibre y ajo tostados en una sart\u00e9n.<\/p>\n<h2>\u00bfC\u00f3mo preparar el tempeh?<\/h2>\n<p>La variante m\u00e1s sencilla: cortar el tempeh en lonchas fin\u00edsimas, sazonar y fre\u00edr hasta que est\u00e9 crujiente. Puede comerse en <span style=\"color: #ff6600;\"><a style=\"color: #ff6600;\" href=\"https:\/\/www.eldigitaldeasturias.com\/noticias\/category\/gastronomia\/\" target=\"_blank\" rel=\"noopener\"><strong>bocadillo<\/strong><\/a><\/span>, en wrap o utilizarse como sustituto del beicon.<\/p>\n<p>Si se desmenuza, el tempeh puede sustituir a la carne picada, por ejemplo en salsas para pasta o chili sin carne, seg\u00fan el BZfE.<\/p>\n<p>Tambi\u00e9n hay receta de \u00abpatatas fritas\u00bb de tempeh: se corta en pedazos del tama\u00f1o de un dedo, estos se marinan y se hornean hasta que est\u00e9n crujientes. Lo mejor es aderezarlos luego con salsa de cacahuete.<\/p>\n<h2>\u00bfQu\u00e9 nutrientes aporta el tempeh?<\/h2>\n<p>El tempeh, como el tofu, es una buena fuente de prote\u00ednas vegetales. Contiene 19 gramos de prote\u00ednas por cada 100 gramos. Adem\u00e1s, el tempeh aporta vitamina B12 y minerales como el potasio y el calcio.
