La manzana suma un componente agridulde.<\/p>\n<p>Ingredientes para 4 personas:<\/p>\n<p>Para las manzanas: 2 manzanas, 30 g de mantequilla, sal, 10 ml de vinagre de vino blanco, algo de az\u00facar (a gusto), 50 ml de jugo de manzana, 20 g de perejil o perifollo.<\/p>\n<p>Para el apio: 1 ra\u00edz de apio peque\u00f1a (apio nabo), 5 granos de pimienta gorda o de Tabasco (Pimenta dioica), 10 granos de pimienta negra, 100 ml de caldo de verduras, sal, 1 caf\u00e9 fuerte (150 ml), 20 ml de salsa de soja dulce (kecap manis), 1\/2 cucharadita de te de f\u00e9cula de ma\u00edz<\/p>\n<p>Para acompa\u00f1ar: perejil, cro\u00fbtons<\/p>\n<h2>Preparaci\u00f3n:<\/h2>\n<p>1. Pelar las manzas y cortar en rodajas, quitando el centro. Cortar las rodajas de manzana primero en bastones y luego en daditos.<\/p>\n<p>2. Hacer espumar la mantequilla en una olla a temperatura media. A\u00f1adir los dados de manzana, salar ligeramente y luego a\u00f1adir el vinagre. Agregar algo de az\u00facar a gusto. A\u00f1adir el jugo de manzana y cocer las manzanas hasta que este se haya evaporado. Quitar las manzanas del fuego y dejarlas enfriar. Picar el perejil o perifollo muy fino y mezclar.<\/p>\n<p>3. Pelar el apio nabo y luego cortarlo en rodajas del grosor de un dedo. Calentar una plancha o sart\u00e9n sin grasa a fuego medio y tostar las rodajas brevemente, hasta que est\u00e9n ligeramente doradas.<\/p>\n<p>4. Colocar las especias en una olla y tostar a temperatura media, agregar el caldo. Colocar las rodajas de apio en el caldo, salar ligeramente y dejar cocer a temperatura baja y tapado durante unos tres minutos. A\u00f1adir el caf\u00e9 y la salsa de soja y dejar cocer los apios otros entre 3 y 4 minutos, con la olla tapada. Probar con un cuchillo el grado de cocci\u00f3n.<\/p>\n<p>5. Retirar los apios cuando est\u00e9n casi cocidos y colocarlos sobre una placa, cubrir con papel film y mantener caliente en el horno a 60 grados.<\/p>\n<p>6. Dejar cocer un poco la decocci\u00f3n, mezclar la f\u00e9cula de ma\u00edz con un poco de agua y a\u00f1adirla. Colocar los apios en la decocci\u00f3n y dejarlos cocer a fuego lento, cubri\u00e9ndolos una y otra vez con el l\u00edquido. Quitar las especias antes de servir.<\/p>\n<p>7. Colocar los apios en los platos, salpicar con la decocci\u00f3n y colocar las manzanas encima o al lado de forma decorativa.
